Ingredients:
- 3 tablespoons olive oil, divided
- 1 Lime, zested, and juiced
-2 teaspoons of minced garlic
- 1 1⁄2 teaspoons salt, divided
- 1⁄2 teaspoon ground black pepper
- 2.5 pounds chicken breasts, thawed and cut into 1” cubes
- 2 bell peppers, cut into ½” pieces
- 2 medium zucchinis, cut into ½” pieces
- 2 large sweet potatoes, peeled and cut into ½” cubes
- Sliced banana peppers (optional)
- 2 cups rice
- 4 cups chicken broth
- 1 large avocado, sliced
- Cilantro, chopped
Instructions:
1. Preheat your oven to 400°F
2. In a small bowl, combine 2 tablespoons of olive oil, lime zest, lime juice, minced garlic, 1 teaspoon salt, and black pepper. Mix well.
3. In a large bowl, toss the chicken cubes with the prepared marinade until evenly coated. Allow the chicken to marinate while you prepare the vegetables.
4. On a large baking sheet, spread out the bell pepper, zucchinis, sweet potato pieces, and sliced banana peppers if using. Drizzle with the remaining tablespoon of olive oil and sprinkle with the remaining 1/2 teaspoon of salt. Toss until the vegetables are evenly coated.
5. Arrange the marinated chicken cubes on a separate baking sheet.
6. Bake both in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through.
7. While the chicken and vegetables are baking, prepare the rice according to package instructions, substituting water with chicken broth for added flavor.
8. Once cooked, remove from the oven and let it cool for a few minutes.
9. Serve the garlic lime chicken bake hot over rice, garnished with sliced avocado and chopped cilantro.
